We had quite a bit of pork leftover from Saturday's dinner party. In the end I cooked two roasts. The ones we ordered were rib roast, chine in so there was quite a bit of bone. We weren't sure how much meat we would finally get off of them and two of the people like their pork cooked to the gov't standard of 160 F while the rest of us are happy with 140 F so all were pleased with the outcome. Now leftover pork is not something easy to use up. If you aren't careful it will be dry and chewy, if it were up to me I would have sauteed it with home made vinegar peppers, onions and mushrooms and tossed it on egg noodles, but husband would never eat that in a million years. I wasn't going to slice it tissue paper thin and make Cuban sandwiches with it so I needed an alternative. A search around the web found two prevalent options. Stir fry and Casserole. Since I know that the Brit will eat anything I put under a pastry lid I thought I could make a sort of casserole and put it in individual ramekins and cover it with puff pastry.
