Sate or Satay simply means BBQ on skewers. Around here, we skip the skewers and call this dish Sate. It works for us. We serve it with Thai Peanut Sauce and some side dishes of choice.
Plan on marinating this for at least a day.
Sate marinade
2 cloves of garlic
1/2 onion roughly chopped
1 TBS palm sugar or brown sugar
Juice of 1 lime
1 TBS fish sauce (Nam Pla)
2 -3 TBS tamarind pulp (see Peanut Sauce recipe, I do it the same way)
1 TBS vegetable oil
I throw everything in the food processor and whiz it up. I put 1
ziploc inside of another and place sliced chicken breast in strips and
some boneless skinless thighs in the bags, pour this in, squish it
around, seal it up and put it in the fridge. I'll flip it over a few
times to make sure it is marinating well.
Fire up the grill. These are messy so prepare to clean your grill after.
Grill until cooked and serve with Peanut Sauce.
